Step 1
Put the beets in a big pot and covering them with water. Bring it to a boil, then turn the heat down to medium-low and let them simmer until you can easily poke them with a forkβthis usually takes about an hour. Once they're tender, drain the water and let the beets cool enough so you can handle them without burning your fingers. Peel off the skins, chop the beets into cubes, and pop them in the fridge for about 15 minutes to chill.
