Heat your oven to 350°F (175°C) and lightly grease a 9x13-inch baking dish. In a large bowl, mix together the flour, maple syrup, cocoa powder, baking powder, and salt until everything is well combined. In a separate bowl, mash the bananas and then stir in the coconut milk, olive oil, and vanilla extract. Pour the wet ingredients into the dry and give it a good stir until the batter comes together evenly. Gently fold in the chocolate chips. Pour the batter into your prepared dish and sprinkle the top with cocoa nibs. Pop it in the oven and bake for about 30 minutes, or until a toothpick inserted in the center comes out clean.
