Step 1
Gently heat your oven to 350ยฐF (175ยฐC). Give the pork roast a quick rinse and pat it dry with paper towels. Using a sharp knife, make several deep slits all over the roastโvary the depth a bit. Stuff each slit with a piece of garlic to infuse the meat with flavor.
Step 2
In a small bowl, combine the water, brown sugar, and maraschino cherries along with their juice. Place the roast inside an oven bag and pour the cherry mixture over it. Seal the bag tightly and set it in a roasting pan.
Step 3
Pop the pan into the oven and let it bake for about 3 hours, or until the pork reaches an internal temperature of 145ยฐF (63ยฐC). Once done, carefully remove the roast from the bag and transfer it to a serving plate. Spoon some of the juices over the top, then let it rest for 15 minutes before slicing and serving.
