Step 1
Lightly heat your oven to 375Β°F (190Β°C). In a big bowl, combine the whole wheat flour with the cinnamon, baking powder, and salt. In another bowl, mash together the butter, demerara sugar, and brown sugar until everything is well blended and creamy. Then, mix in the apple butter until smooth. Next, add the eggs, vanilla extract, and apple juice, stirring everything until itβs fully combined.
Step 2
Gradually add the wet mixture to the dry ingredients, about a third of a cup at a time, mixing after each addition. Once the dough comes together, fold in the oats and chopped apple.
Step 3
Using two teaspoons, scoop out the dough and roll it into balls. Place them on ungreased baking sheets, spacing them about two inches apart. Bake for around 10 minutes, or until the cookies are lightly golden and set in the middle. Let them cool on the baking sheet for a couple of minutes before transferring to wire racks to finish cooling. Enjoy!
