Lightly heat your oven to 375°F (190°C). In a medium saucepan, melt together the sugar, cinnamon, butter, and honey over medium heat, stirring occasionally. Once everything is combined, add the apples and cook them until they’re nice and soft, which should take about 10 minutes.

While the apples are cooking, take your pie crust and cut out 12 rounds that will fit into the cups of a muffin tin. Press each round gently into the cups to form little crusts.

Spoon the warm apple mixture into each crust, filling them about three-quarters full. Pop the tray into the oven and bake until the edges of the crust turn golden brown and look fully cooked, around 10 to 15 minutes.
