Why This Recipe Is A Favorite

These crepes are light, nutty, and naturally gluten-free. They offer a unique flavor that pairs well with both sweet and savory fillings. Plus, they cook quickly and are perfect for a nutritious breakfast or a simple dinner.

Helpful Kitchen Tips

- Use a non-stick pan to prevent the crepes from sticking.
- Let the batter rest for at least 30 minutes to improve texture.
- Cook over medium heat to ensure even browning without burning.

Step 1

Soak the buckwheat groats in about 1 1/3 cups of water. Let them sit for at least 4 hours, or even overnight, rinsing and draining them once or twice while they soak. After the soaking time, give them one last rinse and drain well.

Step 2

Pop the soaked groats into a blender along with the egg, brown sugar, cinnamon, salt, and half a cup of water. Blend everything until you get a smooth batter. If it feels too thick, add a little more water, a splash at a time, until it’s easy to spread.

Step 3

Heat a lightly greased skillet over medium heat. When it’s hot, pour in about 1/3 cup of batter and tilt the pan around so it spreads out evenly.

Step 4

Let the crepe cook for about 2 minutes, then carefully flip it over. Cook the other side for another 2 minutes or until it feels firm in the middle. Flip it one more time and cook for just a few seconds to finish it off.

Step 5

Serve the crepes right away while they’re warm and enjoy!

Serving Options To Try

Serve warm with fresh fruit and a drizzle of honey for a sweet treat. For a savory option, fill them with sautéed mushrooms, cheese, and herbs. A dollop of yogurt or sour cream also complements the nutty flavor nicely.

Storage Advice

Store any leftover crepes in an airtight container in the refrigerator for up to 2 days. To reheat, warm them gently in a pan or microwave with a damp paper towel to keep them soft. You can also freeze crepes by stacking them with parchment paper in between and placing them in a freezer bag.

Great flavor overall, but I found them a little dry. Next time I’ll try adding more milk. Good recipe though.
