Step 1
Soak the buckwheat groats in about 1 1/3 cups of water. Let them sit for at least 4 hours, or even overnight, rinsing and draining them once or twice while they soak. After the soaking time, give them one last rinse and drain well.
Step 2
Pop the soaked groats into a blender along with the egg, brown sugar, cinnamon, salt, and half a cup of water. Blend everything until you get a smooth batter. If it feels too thick, add a little more water, a splash at a time, until it’s easy to spread.
Step 3
Heat a lightly greased skillet over medium heat. When it’s hot, pour in about 1/3 cup of batter and tilt the pan around so it spreads out evenly.
Step 4
Let the crepe cook for about 2 minutes, then carefully flip it over. Cook the other side for another 2 minutes or until it feels firm in the middle. Flip it one more time and cook for just a few seconds to finish it off.
Step 5
Serve the crepes right away while they’re warm and enjoy!
