Directions
Bring the water and buckwheat to a boil in a saucepan. Once itβs boiling, lower the heat and let it simmer until all the water is absorbed, which should take about 10 minutes. While the buckwheat is cooking, squeeze the lime juice into a bowl and mix in the chopped onion, tomato, Kalamata olives, mint, and dill. Drizzle in the olive oil and rice wine vinegar, then sprinkle in the cumin, salt, and pepper. Give everything a good stir to combine the flavors. When the buckwheat is done and slightly cooled, add it to the bowl and mix everything together. Finish by topping the salad with some crumbled feta cheese before serving.
