Step 1
Spray your egg molds with some nonstick cooking spray, then sprinkle the crumbled bacon evenly into each one. In a blender, combine the shredded cheese, cottage cheese, half-and-half, eggs, and a pinch of salt, and blend everything until it’s nice and smooth. Pour the mixture into the molds, filling them about three-quarters full, then cover the top tightly with foil to keep everything in place.
Step 2
Pour water into the bottom of your Instant Pot or pressure cooker. Place the molds inside, close the lid, and set it to the steam function for 8 minutes. It might take around 5 to 10 minutes for the pressure to build up before the timer starts.
Step 3
Once the cooking time is up, let the pressure release naturally for about 10 minutes, then carefully use the quick-release to let out any remaining pressure. When it’s safe to open, take the molds out and gently pop the egg bites out onto a wire rack.
Step 4
You can enjoy them right away or let them cool before storing in the fridge for up to a week.
