Step 1
Put the pork shoulder in a ceramic bowl that fits inside your slow cooker. Mix water and white vinegar in a 1-to-2 ratio (twice as much vinegar as water) and pour enough over the pork to completely cover it. Sprinkle in the salt, then cover the bowl and pop it in the fridge to marinate for at least 12 hours, or up to 24 if you have the time.
Step 2
When you’re ready to cook, drain some of the liquid so that about half an inch of the pork is poking out. Toss the onion into the remaining liquid. Sprinkle the exposed pork with cumin, mustard powder, chili powder, and brown sugar.
Step 3
Set the bowl back into the slow cooker base and cook on high for 8 to 10 hours, until the pork is super tender and falls apart with ease.
Step 4
Once it’s done, carefully lift the pork out onto a cutting board and shred it using two forks. Trim off any extra fat before serving.
