Lightly heat your oven to 375Β°F (190Β°C). Give your sweet potatoes a good poke all over with a fork, then rub them with a tablespoon of sea salt. Pop them on a baking sheet lined with parchment paper and bake for about 50 to 60 minutes, or until a knife slides in easily. Once theyβre cool enough to handle, slice them in half lengthwise.

Carefully scoop out the insides into a big bowl, keeping the skins intactβthese will hold your filling later. Mash the sweet potato flesh until smooth, then stir in the cream cheese, butter, brown sugar, salt, pepper, cinnamon, nutmeg, and ginger until everything is well combined. Spoon this mixture back into the potato skins and place them on the baking sheet again.
Step 3
Sprinkle the tops with panko breadcrumbs, then add strips of vegan Cheddar in a lattice pattern for some cheesy goodness. Slide them back into the oven and bake until they start to brown, around 10 to 12 minutes. Take them out, sprinkle with parsley and green onions, and bake for another 3 to 5 minutes. Before serving, give them a final dusting of nutmeg for a little extra warmth and flavor.
