Spoon the batter evenly into a 12-cup muffin tin. Pop the tin into the oven on the middle rack and bake for about 12 to 15 minutes, or until a toothpick inserted in the center comes out cleanโtry not to overbake. Once theyโre done, let the cupcakes cool completely, which usually takes around 45 minutes. While theyโre cooling, mix the confectionersโ sugar, cream cheese, butter, lemon juice, and lemon zest until the frosting is smooth and creamy. Cover it with plastic wrap and chill in the fridge for at least half an hour before spreading it on the cupcakes.
