Step 1
Heat your oven to 350Β°F (175Β°C) and line a baking sheet with parchment paper, lightly greased so the cookies donβt stick. Soak the dates in hot water for about 6 to 10 minutes until theyβre nice and soft, then drain them well.

Toss the dates, almond pulp, oats, almond milk, almond flour, coconut flour, coconut oil, applesauce, vanilla, cacao nibs, cinnamon, salt, and nutmeg into a food processor. Blend everything until it comes together into a dough-like consistency. If it feels too dry, add a little water to help it bind.

Take about a tablespoon of dough and roll it between your hands, then gently pinch the sides to shape it into a square. Place the cookies on your prepared sheet and press down lightly with your fingers or a fork to flatten them a bit. Keep going until all the dough is used.

Pop the cookies into the oven and bake for around 20 minutes, until they turn golden brown. Let them cool completely before moving on to the chocolate.

Melt the dark chocolate in a microwave-safe bowl by heating it in short 15-second bursts, stirring in between, until itβs smooth and glossy. Finally, drizzle the melted chocolate over the cooled cookies for a delicious finish.
