Step 1
Gently heat your oven to 350ยฐF (175ยฐC). In a big bowl, combine the ground pork, luncheon meat, chorizo de Bilbao, chopped pickles, raisins, eggs, salt, and pepper. Mix everything well until itโs all blended together. Shape the mixture into two logs and wrap each one tightly in aluminum foil. Pop the wrapped logs into a baking dish.

Bake them in the oven for about an hour. Once done, take them out and let them rest for a bit. While the meatloaves are resting, carefully pour the drippings from the baking dish into a small saucepan and put it over medium heat. Add soy sauce and cornstarch to the drippings, then bring it to a boil. Keep stirring and cooking until the sauce thickens, which should take around 5 to 7 minutes.

Finally, unwrap the meatloaves and slice them up. Serve the slices with the sauce drizzled on top and enjoy!
