Heat your oven to 350Β°F (175Β°C) and either grease your cookie sheets or line them with parchment paper. In a medium bowl, beat together the shortening, cream cheese, and milk until everything is smooth and well mixed. Then, stir in the brown sugar and 1/4 cup of apricot preserves. In a separate bowl, whisk together the flour, baking powder, cinnamon, and salt, and gradually add this to the wet ingredients. Once combined, fold in the pecans. Drop spoonfuls of the dough onto your prepared baking sheets, leaving about 2 inches between each. Bake for 8 to 10 minutes until the edges are lightly golden. Let the cookies sit on the baking sheet for about 5 minutes before moving them to a wire rack to cool completely. For the frosting, mix together the confectionersβ sugar, the rest of the apricot preserves, and 1 tablespoon of shortening until smooth. Spread this over the cooled cookies and sprinkle with coconut if you like.
