Spray the inside of your Instant Pot with cooking spray. Pour in half of the chicken broth, then add the chicken breasts and sprinkle the taco seasoning over them. Next, toss in the beans, corn, salsa, and rice. Pour the remaining broth over everything, making sure the rice is fully covered.

Close the lid and lock it in place. Set your pressure cooker to high pressure and cook for 22 minutes. Itโll take about 10 to 15 minutes for the pressure to build up.

Once the cooking time is up, let the pressure release naturally โ this usually takes around 12 minutes. When itโs safe to open, carefully remove the chicken and set it aside on a cutting board to rest. Give the rice a gentle fluff to keep it from sticking and pop the lid back on for another 5 minutes.
