Bring some water and quinoa to a boil in a saucepan. Once it’s boiling, turn the heat down to medium-low, cover the pot, and let it simmer until the quinoa is nice and tender, which usually takes about 15 to 20 minutes.

While that’s cooking, go ahead and preheat your oven to 350°F (175°C).

In a large bowl, roughly mash the chickpeas with a fork or potato masher. Add the cooked quinoa, ground chicken, egg whites, grated beets, oat bran, chopped onion, chopped prunes, diced poblano pepper, and all the seasonings—salt, chile powder, cumin, and black pepper. Mix everything together until it’s well combined.

Shape the mixture into six evenly sized patties. Wrap each one loosely in aluminum foil to keep them moist while baking.

Place the foil-wrapped patties on a baking sheet and pop them into the oven. Bake for about 20 minutes, or until the burgers are cooked through and no longer pink inside. If you have a meat thermometer, it should read 165°F (74°C) in the center.
