Why This Dish Is So Special
Helpful Cooking Tips
- Cook the chicken first and set it aside to avoid overcooking.
- Stir constantly when frying the rice to prevent it from sticking or burning.
Step 1
Warm some oil in a large non-stick skillet over medium-high heat. Add the chicken and cook it for about 6 minutes, until itโs nicely browned. Toss in the light parts of the onions, garlic, and ginger, and stir everything around for another minute to release those flavors.
Step 2
Pour in the broth and rice, then cover the pan with a tight-fitting lid. Let it cook gently over medium-low heat for about 15 minutes, until the rice is tender and the broth has been absorbed. During the last few minutes, add the broccoli and peas so they steam right along with the rice.
Step 3
Once itโs done, take the pan off the heat and let it sit, still covered, for a couple of minutes. Finally, remove the lid, fluff the rice with a fork, and sprinkle on the green parts of the onions before serving.
