Step 1
Giv the quinoa a good rinse in a fine mesh strainer to get rid of any bitterness. Toss the quinoa and water into your Instant Pot or any similar pressure cooker, then stir in the vegetable bouillon. Seal the lid and set it to cook on high pressure for 10 minutes. Itโll take about 10 to 15 minutes for the pressure to build up.

While the quinoa is cooking, go ahead and heat your oven to 375ยฐF (190ยฐC) and line a baking sheet with parchment paper. When the cooking time is up, carefully release the pressure using the quick-release method, then open the lid.

Transfer the cooked quinoa to a big bowl and mix in the salsa, nutritional yeast, cumin, chili powder, garlic powder, salt, and pepper. Give everything a good stir so all the flavors come together. Spread the quinoa mixture evenly on the prepared baking sheet.

Pop it in the oven and bake for about 15 minutes, then give it a stir. Keep baking it for another 5 to 15 minutes, or until the quinoa is nicely dried out and a bit crispy. Enjoy!
