- Rinse the rice before cooking to keep it fluffy and prevent clumping.

Step 1
Set your Instant Pot to the sautรฉ setting and heating a bit of oil. Toss in the sausage and cook it for about 5 minutes until itโs nicely browned. Scoop the sausage out with a slotted spoon and set it aside for now. Next, add the chopped onion, bell pepper, and celery to the pot and cook them until they soften, about 3 minutes. Stir in the garlic, Creole seasoning, thyme, and oregano, letting everything cook together for another couple of minutes before turning the pot off.
Step 2
Now, add the beans, broth, hot sauce, and a bay leaf to the pot with the veggies. Seal the lid and set the pressure cooker to high for 30 minutes. It will take a bit of time to come up to pressure. When the cooking time is up, let the pressure release naturallyโthis can take anywhere from 10 to 40 minutes.
Step 3
Once youโre able to open the lid, fish out the bay leaf and discard it. Stir the cooked sausage back into the pot. Switch the pot back to sautรฉ and cook everything for about 10 minutes, stirring often. This helps mash some of the beans and thickens the sauce. When it looks nice and creamy, turn off the heat and let it sit for 10 minutes to settle.
Step 4
Serve the beans over warm rice and sprinkle with some chopped parsley and green onions for a fresh finish.
