- Make sure to cut the cauliflower into even pieces so it cooks uniformly.

Step 1
Spray the inside of your slow cooker with some cooking spray. Next, coat a small skillet with spray and cook the sausage over medium heat until itโs nicely browned, about 2 to 3 minutes. Transfer the sausage to the slow cooker, then add the cauliflower, cream cheese, butter, garlic powder, salt, pepper, and red pepper flakes. Give everything a good stir to mix it all together.
Step 2
Cover the slow cooker and let it cook on low for around 2 hours, or until the cauliflower is tender when poked with a fork. Once thatโs done, stir in the pepper jack cheese and let it cook for another 30 minutes.
Step 3
While the casserole finishes up, cook the bacon in a large skillet over medium-high heat. Turn it occasionally until itโs crispy and evenly browned, which should take about 10 minutes. Drain the bacon on paper towels, crumble it up, and sprinkle it over the top of the casserole before serving.
