Directions
Drizzl a little olive oil on the bottom of your slow cooker. Then, toss in the tomatoes with their juice, seitan, sausage, chopped onion, green bell pepper, celery, vegetable broth, garlic, miso paste, Cajun seasoning, thyme, and oregano. Give everything a good stir to combine. Cover and let it cook on low for about 4 hours. After that, add the rice to the slow cooker, switch the heat to high, and cook until the rice is tender, which should take around 30 minutes. Once it’s all done, sprinkle some fresh parsley on top for a little extra color and flavor. Enjoy!
