Cook the chourico in a large pot over medium-high heat until it starts to release its oil and gets a bit crispy. Toss in the chopped onion and cook everything together, stirring occasionally, until the onions soften—this should take about 5 minutes. Next, add the garbanzo beans, diced tomatoes, sweet potatoes, vegetable broth, and thyme. Crank the heat up to bring the soup to a boil, then lower it to medium-low. Cover the pot and let it simmer until the sweet potatoes are tender, which usually takes around 10 minutes. Once the potatoes are soft, stir in the baby spinach and let it cook for another 5 minutes until the greens wilt. Give the soup a taste and season with salt and pepper as you like before serving.
