Gently heat a large skillet over medium-high heat. Brown the ground beef, breaking it up as it cooks, until it’s no longer pink—about 5 to 7 minutes. Drain off any excess grease. Then stir in the salsa, corn, and taco seasoning, and season everything with a little salt and pepper to taste.

While the beef mixture simmers, preheat your oven to 375°F (190°C). Bring a large pot of salted water to a boil, add the pasta, and cook it until it’s just tender but still has a little bite, usually around 10 to 12 minutes. Drain the pasta and set it aside.

Mix the cooked pasta with the beef mixture, Colby-Jack cheese, and chopped green onions right in a 9x13-inch casserole dish. Sprinkle the Cheddar cheese evenly over the top.
