Crack 4 large eggs into a bowl and beat them well. Heat about a teaspoon of oil in a pan, pour in the eggs, and scramble them gently. Once cooked, set them aside.

In a small bowl, mix together soy sauce, oyster sauce, barbecue sauce, chili flakes, sugar, cornflour, and water until smooth. Set this sauce aside for later.

Heat another teaspoon of oil in the pan, then add chopped carrots, chillies, and spring onions. Stir-fry for about a minute, then add the chopped garlic and cook everything for another 2-3 minutes.

Add the scrambled eggs back into the pan along with the sauce mixture. Stir everything together and cook for 1-2 minutes until the sauce thickens a bit.

Take the pan off the heat, sprinkle fresh coriander leaves on top, and give it a quick stir.
