Heat some oil in a large nonstick skillet over medium-high heat. Toss in the bell pepper and carrots, and sautรฉ them for about 2 minutes until they begin to soften. Then add most of the green onions (save a little for garnish), along with the ham, green peas, and garlic. Cook everything together for another 3 minutes so the flavors meld.

Stir in the riceโno need to heat it beforehand. Drizzle soy sauce and a splash of vinegar over the mixture, and let it cook for about 3 minutes, stirring occasionally to keep it from sticking.

Now, make four little wells in the rice and crack an egg into each one. Cover the pan and let it cook until the egg whites are set and the yolks reach the doneness you like, usually around 5 to 7 minutes.
