Step 1
Cut 2-3 eggplants into finger-sized sticks. Fill a large bowl with water and add a pinch of salt, then soak the eggplant pieces in it for about 20 minutes.

After soaking, pat the eggplants dry with paper towels and transfer them to a clean bowl.

Add a little oil, one beaten egg, garlic powder, cumin, pepper, oregano, salt, breadcrumbs, and some chopped coriander leaves to the eggplants. Mix everything gently until well combined.

Spread the coated eggplant sticks on a baking tray lined with parchment paper.

Bake in a preheated oven at 200°C (about 400°F) for 15 minutes, or until they’re golden and crispy.
