Warm a skillet over medium heat and melt a bit of butter in it. While that’s warming up, crack the eggs into a bowl and add the wild puffball mushrooms. Give everything a good whisk until it’s well combined. Set aside about two tablespoons of the green onions for garnish. Once the butter is melted and hot, pour in the egg mixture. Gently scramble the eggs, stirring slowly to form soft, fluffy curds. As the eggs begin to set, sprinkle in the rest of the green onions along with some salt and pepper. Keep cooking for about 3 to 5 minutes, or until the eggs are just how you like them—make sure not to overcook. When you’re ready to serve, top with the reserved green onions for a fresh pop of flavor.
