Heat your oven to 350Β°F (175Β°C) and get your muffin tin ready by either greasing the cups or lining them with paper liners. In a big bowl, mix together the flour, oats, brown sugar, baking powder, and salt. Then, add the applesauce, yogurt, 1/4 cup of skim milk, vegetable oil, and the egg. If the batter feels a little dry, just stir in a bit more milk, a tablespoon at a time, until itβs thick but moistβkind of like oatmeal. Gently fold in the blueberries and walnuts so theyβre evenly spread throughout. Spoon the batter into the muffin cups, filling them almost all the way. Pop them in the oven and bake for about 15 to 20 minutes, or until a toothpick comes out clean when you poke the center. Let them cool a bit before digging in!
