Step 1
Put the asparagus and a little water in a microwave-safe dish. Cover it and microwave on high for about 3 minutes, then give it a quick stir. Keep microwaving in 2 to 3-minute bursts until the asparagus is a bright green and just tender. Once done, drain any excess water and let it cool.
Step 2
In a large bowl, gently toss together the cooled asparagus with the mushrooms, avocado, zucchini, tomato, and red onion. For the dressing, combine the lemon juice, olive oil, balsamic vinegar, Dijon mustard, garlic, basil, thyme, salt, and pepper in a jar with a lid. Shake it up well to blend all the flavors.
Step 3
Pour the dressing over the salad and toss everything lightly until itโs all evenly coated. Cover the bowl and pop it in the fridge until youโre ready to serve.
