Step 1
Heat the bacon grease in a large pot over medium heat. In a bowl, mix the flour with some salt and pepper, then toss the beef cubes in it until they're well-coated. Brown the meat in the hot bacon grease until it gets a nice, deep color, then transfer it to a paper towel-lined plate and set it aside.

Add a splash of olive oil to the same pot and gently cook the onions, garlic, carrots, and celery over low heat until they're soft and fragrant. Stir in the vinegar and sugar, then pour in the broth. Bring everything to a boil, scraping up any browned bits stuck to the bottom — that’s where a lot of flavor is!
