Step 1
Bring a large pot of lightly salted water to a boil. Once itβs bubbling, gently add the soba noodles and cook them uncovered for about 5 to 7 minutes, stirring now and then, until theyβre tender but still have a bit of bite. Drain them and rinse with cold water to stop the cooking.

While the noodles are cooling, heat some canola oil in a pan over medium heat. Toss in the onion, garlic, and ginger, and cook until the onions become soft and translucentβabout 3 to 4 minutes. Then add the carrots, red bell pepper, and half of the scallions, cooking for another 3 to 5 minutes until the veggies are just tender.

In a large bowl, whisk together the soy sauce, peanut butter, sesame oil, hot sauce, and brown sugar until smooth. Add the cooked noodles, sautΓ©ed veggies, and cucumber, then toss everything together so the sauce coats everything nicely.
Step 4
Finish it off by stirring in the rice vinegar and toasted sesame seeds. Pop the whole bowl into the fridge for at least 30 minutes to let the flavors meld. When youβre ready to eat, sprinkle the remaining scallions on top and serve with lime wedges for a little fresh zing.
