Step 1
Peel the potatoes and putting them in a big pot of water. Bring it to a boil and cook until the potatoes are tender when poked with a fork, usually about 20 to 30 minutes. While the potatoes are cooking, go ahead and preheat your oven to 350°F (175°C) and lightly grease a 3-quart casserole dish with some butter spray.
Step 2
Once the potatoes are done, drain them and mash them up in a bowl. Add about a quarter cup of milk, some salt, and pepper to taste. If it feels too thick, you can always add a bit more butter or milk to get it just right. Stir in the sour cream and half a cup of shredded Cheddar cheese until everything is well combined. Pour this mixture into your prepared casserole dish.
Step 3
Pop the dish into the oven and bake for about 20 minutes, just until everything is warmed through. Then sprinkle the rest of the Cheddar cheese on top, along with some crumbled bacon and chopped chives. Put it back in the oven for another 5 minutes or so, until the cheese is melted and bubbly. Serve hot and enjoy!
