Step 1
Heat your oven to 450ยฐF. While thatโs warming up, spray a large skillet with cooking spray and set it over medium-high heat. Beat the eggs in a bowl, then pour them into the skillet. Keep stirring gently until the eggs are fully cooked, which should take about 5 minutes.

Spread the potato nuggets out in a single layer on a baking sheet and pop them in the oven. Let them bake until theyโre golden and crispy, around 17 to 19 minutes.

While the potatoes are cooking, combine the green onions and butter in a cold saucepan. Take the sausages out of their packaging, place them on a microwave-safe plate, cover with a paper towel, and microwave for about a minute until heated through. Chop the sausages into small pieces and add them to the saucepan along with the bacon. Warm everything over medium heat, stirring occasionally until the butter melts.

To make the gravy, stir in a few spoonfuls of flour at a time to the sausage mixture until it forms a thick paste. Slowly pour in the milk while stirring constantly. Turn the heat down to low and keep stirring until the gravy thickens, about 5 minutes. Take it off the heat and season with black pepper and a pinch of cayenne.

Lay one tortilla flat on a microwave-safe plate and place two slices of cheddar cheese down the center. Spoon a quarter of the scrambled eggs over the cheese, then add about five potato nuggets. Microwave this until itโs warmed through, roughly 20 seconds. Drizzle some of the sausage gravy along the middle, then microwave for another 20 to 30 seconds to meld everything together. While itโs still warm, fold one edge of the tortilla over the filling and roll it up. Repeat the process with the remaining ingredients until you have four hearty breakfast burritos ready to enjoy.
