Directions
Combin the farro, coconut milk, almond milk, maple syrup, vanilla, cinnamon, nutmeg, and a pinch of salt in a large pot. Place it over medium heat and bring everything to a gentle simmer, stirring every now and then so it doesn’t stick. Once it’s simmering, cover the pot and turn the heat down to low. Let it cook slowly for about 20 to 25 minutes, or until most of the liquid is absorbed and the farro is tender but still has a bit of bite. When it’s ready, give it a good stir and serve it warm. Top with some toasted coconut and almonds for a nice crunch and extra flavor.
