Step 1
Turn on your Instant Pot and setting it to the sauté mode. Melt the butter in the pot, then add the rice. Cook it for a couple of minutes, stirring now and then, until the rice looks a bit translucent. Next, pour in the water, chicken broth, lime juice, and add some salt. Give everything a good stir.
Step 2
Lock the lid in place and set the Instant Pot to high pressure for 4 minutes. It will take about 10 minutes to come up to pressure before the timer starts counting down. When the cooking time is up, let the pressure release naturally for about 5 minutes, then carefully switch to quick release to let out any remaining steam.
Step 3
Once the pressure is fully released, open the lid and stir in the lime zest. Fluff the rice gently with a fork to separate the grains. Serve it right away with lime wedges on the side and sprinkle with fresh chopped cilantro for a bright, fresh finish.
