Step 1
Lightly heat your oven to 400°F (200°C). In a microwave-safe bowl, combine the mozzarella and cream cheese, then microwave for about 1 ½ minutes until melted and smooth. Give it a good stir. Next, add the almond flour, salt, oregano, garlic powder, and black pepper. Use your hands to mix everything together until it forms a dough. Once it’s combined, toss in the beaten egg and stir until it’s fully incorporated.
Step 2
Spray two large sheets of parchment paper with non-stick spray. Place the dough on one sheet, then cover it with the other. Flatten the dough into a 10-inch circle using your hands or a rolling pin. Peel off the top parchment and transfer the bottom sheet with the dough onto a baking sheet. Use a fork to poke holes all over the dough to stop it from puffing up while baking.
Step 3
Pop the crust into the oven and bake for 12 to 17 minutes, until the bottom starts to turn golden brown. While that’s baking, heat the chorizo in a microwave-safe bowl. Cover it with a paper towel and microwave in three 1-minute bursts, stirring well between each.
Step 4
Once the crust is ready, take it out and spread half a cup of mozzarella cheese on top. Add the cooked chorizo, salsa, and some chopped onion. Return it to the oven for another 4 to 6 minutes, until the cheese melts nicely. Finish it off with a sprinkle of fresh cilantro before serving.
