Step 1
Gently heat a tablespoon of oil in a large skillet over medium-high heat. If you like, season the shrimp with a little salt and pepper, then cook them just until they turn pink—about a minute on each side. Take them out and set aside; they won’t be fully cooked yet. Next, season the chicken the same way and brown it in the same skillet, turning it so all sides get a nice color, which should take around 5 minutes. Remove the chicken and set it aside with the shrimp.
Step 2
Add the remaining tablespoon of oil to the skillet, then cook the sausage, stirring now and then, until it’s nicely browned—about 4 minutes. Toss in the celery and cook until it starts to soften and turn translucent, roughly 3 minutes. Then add the peppers and cook for another couple of minutes until they’re just tender. Stir in the garlic and cook for about 30 seconds until you can smell that wonderful aroma.
Step 3
Pour in the water and the Cajun Red Beans & Rice mix, stirring everything together. Bring it up to a boil, then cover the skillet, lower the heat a bit, and let it simmer for 5 minutes. Now stir in the chicken and shrimp you set aside earlier, and cook for another 3 to 4 minutes until the rice is tender and everything is heated through. Let it sit for a couple of minutes before serving.
