Step 1
Lightly heat a skillet over medium heat and adding a little oil. Toss in the onions and cook, stirring occasionally, until they soften and become translucent, which should take about 5 minutes. Turn the heat down to low and let the onions cook slowly, stirring now and then, until theyβre really tender and a deep golden brownβthis will take around 40 minutes. Once done, take the pan off the heat and let the onions cool.
Step 2
While the onions are cooling, slice the figs lengthwise into thin rounds, about a quarter-inch thick. To assemble, spread a small dollop of goat cheese on each cracker, add a bit of the caramelized onions on top, and finish with one or two fig slices. Enjoy!
