Step 1
Heat your oven to 450°F (230°C). Set a wire rack on a baking sheet and give it a quick spray with cooking spray to keep things from sticking. Next, take your chips and pulse them in a blender until they’re crumbly like breadcrumbs—do this in batches if needed. Spread the crumbs out on a plate.
Step 2
In a bowl, whisk the egg whites until they’re slightly frothy. Dip each piece of fish into the egg whites, then coat them thoroughly with the chip crumbs. Lay the coated fish on the prepared rack and give them a light spray of cooking spray on top.

Pop the fish in the oven and bake for about 15 minutes. Once that’s done, switch your oven to broil and cook the fish just until they’re golden and crispy, which should take around 5 minutes—keep a close eye so they don’t burn!

While the fish is cooking, toss together the coleslaw mix and green onions in a big bowl. In a separate bowl, whisk together yogurt, honey mustard, vinegar, celery seed, salt, and pepper to make a tangy dressing. Pour this over the coleslaw and mix everything well.

To assemble, place a piece of the crispy fish on the bottom half of each slider bun, then pile on some of the dressed coleslaw before topping with the bun. Enjoy!
