Step 1
Combine the coconut flour, sweetener, baking powder, and salt in a big bowl. In another bowl, whisk together the almond milk, eggs, melted butter, and vanilla extract until everythingโs well combined. Pour the wet ingredients into the dry and gently stir until the batter comes together.
Step 2
Heat a large skillet over medium-high and grease it lightly with coconut oil. Spoon about 3 tablespoons of batter onto the skillet for each pancake, making small circles around 3 1/2 inches wide. Let them cook for about 2 minutes, until the bottoms turn golden brown. Flip carefully and cook for another 2 minutes on the other side.
Step 3
Keep going with the rest of the batter, adding a bit more coconut oil to the pan if needed between batches. Serve warm and enjoy!
