Take the steaks out of the fridge and let them sit on a platter for about 30 minutes so they come to room temperature. While you’re waiting, heat up your grill to high and give the grates a light coating of oil to prevent sticking. Also, preheat your oven to 400°F (200°C).

In a small bowl, mix together olive oil, pepper, salt, garlic powder, onion powder, a pinch of cayenne, brown sugar, and a splash of lemon juice. Spread this flavorful mixture evenly over one side of each steak.

Place the steaks on the hot grill with the seasoned side facing up and let them cook for about 2 minutes. Flip them over and sear the side with the seasoning for another 2 minutes.

Pop the steaks into the preheated oven, keeping the seasoned side up, and bake for 8 to 10 minutes if you like them medium-well. Once they’re done, let them rest for a few minutes before slicing and serving—this helps keep all those juices inside.
