In a bowl, mix together the soy sauce, vinegar, brown sugar, green onions, garlic, and mustard powder until everything is well combined. Pour this marinade into a resealable plastic bag, add the steak, and make sure it’s fully coated. Squeeze out as much air as you can, seal the bag, and pop it in the fridge to marinate for about 3 to 4 hours.

When you’re ready to cook, take the steak out of the marinade and throw the leftover liquid away. Heat a non-stick skillet over medium-high heat until it’s nice and hot. Place the steak in the pan and cook it just until the outside is nicely browned and seared, about a minute on each side.

After that, lower the heat a bit and keep cooking the steak until it reaches your preferred doneness—usually around 5 more minutes per side for medium. If you have a meat thermometer, aim for about 140°F (60°C) in the center. Once it’s done, take the pan off the heat and let the steak rest for 3 to 5 minutes before slicing. Finish by sprinkling some sesame seeds on top for a little extra flavor and crunch.
