Gently heat your oven to 400ยฐF (200ยฐC) and lightly grease a baking sheet with cooking spray. In a large bowl, toss the tofu with Buffalo wing sauce until itโs fully coated. Let it sit while the oven heats up so the tofu can soak up the flavors.

Once the oven is ready, spread the tofu cubes out on the baking sheet in a single layer. Spoon a little extra sauce over the top and give them a quick spray with cooking spray. Pop them in the oven and bake for about 10 minutes. Then, flip the tofu pieces over, spray them again, and bake for another 10 minutes or until theyโre nice and firm.

Meanwhile, lay a slice of Swiss cheese on each tortilla and microwave just long enough for the cheese to melt, around 30 seconds. Layer tomato slices over the tortillas, then divide the baked tofu and fresh spinach evenly on top. Finally, wrap up the tortillas around all the fillings and enjoy!
