Mix together the soy sauce, wine, lemon juice, oil, Italian seasoning, ginger, garlic, onion powder, and black pepper in a large resealable plastic bag. Add the chicken, seal the bag, and pop it in the fridge to marinate for at least 3 hours, or even better, overnight. When you’re ready to cook, heat up your grill to medium-high. Thread the chicken onto skewers and set them aside. Pour the leftover marinade into a small saucepan and bring it to a boil on the stove. Give your grill grate a light coat of oil to prevent sticking, then place the skewers on the grill. Cook the chicken for about 8 minutes on each side, basting it a few times with the boiled marinade. It’s done when the juices run clear and the chicken feels firm.
