Step 1

Preheat your oven to 350°F (175°C). Melt some butter right in the bottom of an 8x4-inch loaf pan, then sprinkle brown sugar over the melted butter. Cut pineapple rings in half and arrange them neatly on top of the sugar.

Step 2

In a large bowl, combine the ham, chopped onion, bread crumbs, eggs, and about a quarter cup of the pineapple juice. Stir in the mustard powder and a pinch of cayenne pepper for a little kick. Press half of this mixture evenly into the loaf pan over the pineapple slices.

Step 3

Sprinkle a layer of Swiss cheese over the ham mixture. Then, pack the rest of the ham mixture on top and cover the whole pan with aluminum foil.

Step 4

Pop it into the oven and bake for about 45 to 50 minutes. When it’s done, let it cool for a few minutes in the pan before flipping it upside down onto a serving plate. Slice it up like you would a meatloaf and enjoy!

Serve with mashed potatoes and steamed green beans for a classic meal. A side of roasted vegetables or a crisp salad adds freshness and color to the plate. Leftovers also work great in sandwiches or breakfast hash.
