Preheat your oven to 350°F (175°C). Melt some butter right in the bottom of an 8x4-inch loaf pan, then sprinkle brown sugar over the melted butter. Cut pineapple rings in half and arrange them neatly on top of the sugar.

In a large bowl, combine the ham, chopped onion, bread crumbs, eggs, and about a quarter cup of the pineapple juice. Stir in the mustard powder and a pinch of cayenne pepper for a little kick. Press half of this mixture evenly into the loaf pan over the pineapple slices.

Sprinkle a layer of Swiss cheese over the ham mixture. Then, pack the rest of the ham mixture on top and cover the whole pan with aluminum foil.

Pop it into the oven and bake for about 45 to 50 minutes. When it’s done, let it cool for a few minutes in the pan before flipping it upside down onto a serving plate. Slice it up like you would a meatloaf and enjoy!
