Why You'll Keep Making This
Chef's Cooking Tips
- Let the batter rest for a few minutes before cooking to help the oats soften.
- Cook pancakes on medium heat to avoid burning while ensuring they cook through.
Step 1
Combin the apples, water, and orange juice in a small pot. Bring it to a boil, then lower the heat to medium-low. Add the vanilla extract and cinnamon, and let everything simmer, stirring often, until the apples turn a light golden color and most of the liquid has cooked offโthis should take about 20 to 25 minutes. Once that's done, stir in the maple syrup and keep the heat low to keep it warm.
Step 2
In a separate bowl, whisk together the flour, oats, milk, egg, coconut oil, vanilla extract, sucralose, baking powder, and salt. Mix just until everything is combinedโyou donโt want to overwork the batter.
Step 3
Heat a lightly oiled griddle or skillet over medium-low heat. Spoon the batter onto the griddle in large dollops. Cook the pancakes until you see bubbles forming on top and the edges look set, about 3 to 5 minutes. Flip them over and cook for another 3 to 4 minutes until the other side is golden brown.
Step 4
Keep going until all the batter is used up. Serve the warm pancakes topped with the sweet apple and maple sauce for a cozy, delicious breakfast.
