Chef Tips

Directions
Heat some oil in a small pan over medium heat. Once the oil is warm, add the sesame seeds and toast them, stirring occasionally, until they smell nutty and golden—this usually takes about 6 minutes. Meanwhile, bring a pot of water to a boil. When the seeds are nicely toasted, add them to the boiling water along with the fonio and a pinch of salt. Let everything come back to a boil, then lower the heat and cover the pot. Let it simmer gently until the water is absorbed, which should take around 5 minutes. Once done, fluff the fonio with a fork to separate the grains and serve.
