Step 1
Spray a 9x13-inch casserole dish with cooking spray. In the bottom of the dish, mix together the brown sugar, butter, and a teaspoon of cinnamon. Toss in the apples, cranberries, and pecans to coat them well, then spread this mixture out evenly to cover the bottom.

Arrange the bread slices over the fruit, overlapping them a bit so the apples are completely covered. In a bowl, whisk together the egg substitute, skim milk, vanilla extract, and the remaining cinnamon. Pour this evenly over the bread.

Cover the dish with foil and pop it into the fridge for anywhere from 4 to 24 hours to soak. When youโre ready to bake, preheat your oven to 375ยฐF (190ยฐC). Bake the casserole covered for 40 minutes, then take off the foil and bake for another 5 minutes or until the top is lightly browned and the custard is set. Let it sit for about 5 minutes before serving.
