Step 1
Tos the tomatoes, onion, garlic, apple juice, and a pinch of cayenne pepper into a large pot. Bring everything up to a boil. While that’s heating, put the bay leaf, cloves, celery seed, and peppercorns into a spice bag or wrap them tightly in some cheesecloth. Add the spice bundle to the pot and let it keep boiling, stirring now and then, until the sauce has thickened and reduced by about half.
Step 2
Once it’s reduced, take out the spice bag and stir in the lemon juice. Let the sauce cook for another 10 minutes to blend the flavors, then turn off the heat. When it’s cooled a bit, transfer the sauce to a container with a lid and pop it in the fridge. It should keep well for about a week, or you can freeze it if you want to save it longer.
