Step 1
Cook the bacon in a large skillet over medium-high heat, flipping it every now and then until it’s nicely browned and crispy, which should take about 10 minutes. Once it’s done, transfer the bacon to a paper towel-lined plate to drain, but leave about 2 tablespoons of the bacon grease in the pan. When the bacon has cooled, crumble it up into bite-sized pieces.
Step 2
Toss the onions into the skillet and cook them over medium-high heat until they’re soft and translucent, about 3 to 4 minutes. Add the broccoli rice and keep frying it, stirring often, until it’s tender—this usually takes around 5 minutes. Pour in the beaten eggs and stir everything together until the eggs are fully cooked and mixed in with the broccoli rice.
Step 3
Turn off the heat, then stir in the soy sauce. Just before serving, sprinkle the crumbled bacon over the top and give it a good mix. Finish things off by adding some chopped green onions for a fresh touch.
